the bad gas bubble build up is often happen with very fine substrate like sand. You have ecocomplete, the particle of eco-complete is actually pretty big, so most likely won't cause a problem. Bad gas bubble comes from the build up of trapped ammonia from decayed material trapped in the substrate, if you have very fine substrate such as sand, the gas can't escape and over time it'll become big enough to push through substrate layer and burst, the concentrated ammonia often can kill any fish that comes in contact. This wont happen if you do a vacuum every week. In heavily planted tank it can't happen because the root of plants will penetrate through the gravel and eat any nutrient (ammonia) it can find unless you use sand

Kind of thought so. I was playing around with the scape and messing with the substrate a bit. Also read about trapped gasses in the substrate, could this be bad for plants and livestock?

those "big" bubbles are just trapped air in the substrate. Overtime, it'll stop. pearling from the plants are very very small bubbles and only happen noticeably when you have high light, high light plants and good amount of CO2. I have seen some pearling when using excel, but it's still very hard to notice.
