I'm all about the po'k! Â Especially some BBQ po'k ribs. Â I'm like John Travolta in Pulp Fiction with my diggin' on swine.
Not that I don't love a nice, tender brisket mind you.
Some of the best po'k I ever had was at the Paradise Cove luau in Hawaii. Â The even was pretty touristy but they roast a wild boar in a traditional underground oven. Â They make a big show of it but it's ready in an hour or two and they prepare it just about any way you can think of...enough to feed an army. Â The shredded pork was just as tender and juicy as any brisket you can get here in Texas.
