I'm all about the po'k! Especially some BBQ po'k ribs. I'm like John Travolta in Pulp Fiction with my diggin' on swine.
Not that I don't love a nice, tender brisket mind you.
Some of the best po'k I ever had was at the Paradise Cove luau in Hawaii. The even was pretty touristy but they roast a wild boar in a traditional underground oven. They make a big show of it but it's ready in an hour or two and they prepare it just about any way you can think of...enough to feed an army. The shredded pork was just as tender and juicy as any brisket you can get here in Texas.
