Sexing the shellies is not an easy task... I have kept the first three and they are pretty aggressive towards each other.

would multies do ok in a 10g?
i can easilly get some of those, would it be better to start with multies and maybe get a bigger tank for one of the other pairs once i have alittle more experiance?

IMO the occies/speciosus do better in Harems since the males are pretty hard on the females and brutal to other males.

Multis do fine in just about any setting. I had over 100 in my 20gLong.

oh btw, in the 10g i am keeping 3x water onion plants, i dont know the scientific name
anywho, i will be ordering a new CoralLife CF light in the next few minutes for this 10g.
i was planning on this light

would this be adequate for what i am using it for? the onion plants and Multies?

it comes with a 50/50 bulb, should i switch this out with a 10K?

That plant requires a good nutrient pack substrate... PFS is just gonna compact on it and kill it.

Research would have given you answers to all your questions here.

50/50 is fine but cut your wattage in half due to half of the bulb being actinic.

My specious are little sissies; very disappointing. Mine paired off and only "defend" 6-7 inches of a 20 long. I use "defend" lightly, too. You could try them in a 10, and if they don't work out there are always people on here looking for them.

I have Gold Occies... and hopefully close to Christmas I am going to add more.

Mine has yet to breed which I have a feeling is because I have all males.  I have currently 5 now in my Tanganyika community tank, 4 are always out defending their little 6-8" territory, and they will fight anyone, my cyps, Leleupi, Julie's it dont matter... they are tough as nails.  I moved them from a 20L which was a very peaceful tank to this community tank (which yes I know I have to rearrange the rocks in.. dont chime in yet EK)
Now my community tank is a 110g tank and all I can say is WOW now that they are in with more fish.. you REALLY get to see their "bulldog" in them..
They are fearless at times.. its incredible...
