EK -- Full Frame --- well no more EF-S lenses for you buddy... damn.. well that is a nice camera..
There are only two packages that makes me drool..
Canon 5D Mark II + Canon 100mm f/2.8 Macro USM & More
Canon 5D Mark II + Canon 24-70mm f/2.8L USM & Canon 70-200mm f/2.8 IS USM
Personally I would go for the first package knowing I would instantly picking up a couple of other lenses from craigslist.
1. If someone was selling a 16-35 or 17-40 L lens I would pick that up.
2. If you need telephoto.. no question 70-200mm f/4L IS USM -- IS is the most important part specially if you are going to hand shoot at 200mm
3. Canon Speedlite 580 flash is needed.
4. If you get the Macro lens for the fish shooting, you will need to pick up the 24-105mm f/4L for your day to day lens.
Basically here are the lenses you want to have in your bag.
1. 16-35 or the 17-40 for your wide shots.. (I would get the 17-40 as its 1/2 the cost of the 16-35)
2. 24-105mm f/4L IS USM -- as the std lens to walk around with.
3. 70-200mm f/4L IS USM -- for telephoto
4. 100mm f/2.8 Macro USM
Now you are running the small issue that non of the above lenses can handle low light as they are all stopped at 4, except the Macro lens. Now you can remedy it being that the 5D can have ISO settings without noise at extreme high values, so I would not be as concerned with that compared to just a few years ago.

Gotta disagree a little here.
f4 is nice by f2.8 is even better and it comes down to what you may be shooting
If it is in the budget...
I'm a Nikon guy, but my primary glass is:
24-70 2.8
14-24 2.8 (I like using this for get togethers and of course landscapes)
70-200 VR 2.8 that I rent or borrow for sports
60 2.8 and 105 VR 2.8 - both of these are macro
70-300 VR my telephoto for all other purposes - replacing this one day with my own 70-200
BTW VR=IS300+RR (8-10 ft x 30"x30") - Waiting to find it... Lake Tanganyikan
225RR (72"x24"Wx29"H) DSA - Lake Tanganyikan WC Murago
210RR (60"x24"Wx32"H) AGE - Lake Tanganyikan WC IN PROGRESS
160RR 1/2 cylinder (60"x30"Wx30"H) AGE - Altum Biotope IN PROGRESS
90RR (36"x24"Wx25"H) NEO DSA - Rio Meta Biotope
90RR (36"x24"Wx25"H) NEO DSA - Lake Valencia Biotope

i gotta agree with Darbex. I dont like pictures or being in them, unless they were when i was a lifeguard, then they ok. im trying to get back to that weight or closer to it. but more power to you EK if you really really want a Camera. I am an oldschooler when it comes to photography, i loved my old 35mm, i got a lot of cool photos with that thing with just a little effort. i wonder where i put that camera.Never fear I is here
