I have been cycling my tank for 6 days with Stability. I tested the water today and the water levels are good. Can I start adding fish to the tank or do I need to wait.

If you're using stability, you shouldn't have to wait that long. I used stability and added fish the same day. Did the same for my CRS shrimp with no ill effects. It's basically established bacteria in a bottle. Using stability is the same in the sense of adding a "seasoned" filter to a new tank.

It will be a mixture. I am moving all the fish except the catfish from my 75gal to the 125. I have some blood parrotts, silver dollars yellow labs, acei and some others that I do not know the correct names.

+1! Get them on over! If you're dosing the suggested dosage or more, you should be ready to go right when you dose it. Just keep up the dosages for however long it says on the bottle, but since you're already on day 6, I think you should be fine.
